Menu Plan 11/8-11/15


After writing about saving money on groceries last week and eating from the pantry, I'm going to put myself up to the challenge, as much as possible! I do need a few things from the store (especially to complete this menu plan--who knew I'd start craving oatmeal?!), but I'm going to try to keep myself to those few things even if I feel a strong magnetic pull to certain advertised specials I don't need this week. :)

In the interest of time (my kids are starting to think they have a new sibling to compete with named "computer"--that's never good), I'll just write this pretty quickly:
Breakfasts:
Banana-nut pancakes, milk
English muffins, Fried eggs, OJ
Bagels, Cream Cheese, OJ
Yogurt, blueberries, granola
Oatmeal, brown sugar, raisins, toast, juice & milk
Pancakes or waffles, eggs, bacon, juice

Lunches:
Leftover baked spaghetti (so easy! Take leftover noodles, thin down your sauce with water if you don't have much sauce left; put it in a casserole dish, top with cottage cheese and sour cream (mixed together in equal amounts, between 1/2 and 1c. depending on the size of your casserole), you can mix in 1 can of green chiles if you want, top with cheddar cheese, sprinkle with parmesan cheese, bake at 350 for about 30 minutes...a great way to use up spaghetti leftovers!) and bread--have to make it!
Mac and cheese, mixed veggies, bread and butter, milk
PB & J, applesauce
Grilled cheese, tomato soup, milk
Leftovers
Steak and cheese quesadillas

Dinners:
Parmesan meatballs, rice, green beans, milk
Mexican Lasagna, lettuce, avocado, tomato (This has appeared on several menu plans and yet to be made!)
Tuna casserole or tuna oriental, peas
Parmesan pork chops, mashed potatoes, glazed baby carrots
Grilled London broil, butternut squash, sugar snap peas
(anniversary dinner out! The kids can have a Tombstone and salad maybe or something else I haven't thought of yet :))
Sunday Roast, carrots, potatoes, homemade buttermilk biscuits (perhaps!)

snacks:
Strawberry-banana smoothies
make banana bread
yogurt and pomegranates
veggies and dip
PB yogurt dip and apples
pear slices
almonds and raisins and cheese cubes
Applesauce and PB toast
Homemade graham crackers (this may not happen??), cream cheese
Bake some cookies or muffins
