To make:
- Bran muffins (eat and freeze some--at least that's the plan. Last time, the boys ate them all in a matter of a day--or maybe it was two?).
- Banana bread
- Banana Chocolate-chip muffins
- Granola
- Master baking mix
- Put two whole chickens in the crockpot and shred meat. Use for:
- Chicken Divan (freeze half)
- Mexican chicken casserole (freeze half)
- chicken salad sandwiches (for lunch) and other chicken dinners during the week
- Beans in crockpot, rice, taco-style fixings and tortillas (leftovers into bean and cheese burritos for lunch the next day)
- Ground beef macaroni casserole
- Skillet ziti with chicken and broccoli
- Homemade pizza, salad
- Maybe try Quicker Chicken and dumplings
- Lemon-pepper Tilapia, red potatoes, green vegetable
The goal is to aim for as easy as possible. Oatmeal, scrambled eggs and toast, cold cereal (it's just that season)...peanut butter and jelly sandwiches, dinner leftovers...

One week 'till my baby too! I have the same ideas going on...cook simple and freeze a lot for after the baby. I just bought a new book, Frozen Assets, at the recommendation of a friend. I've gotten lots of good freezer cooking ideas from it!
ReplyDeleteI have 5 weeks to go and I'm doing the same thing! Stocking the freezer for easy meals and healthy snacks/breakfasts. Bran muffins were on my list, also! I'm cooking up a big batch of red beans this week, making granola and granola bars and egg muffins for yummy protein packed breakfasts. All the best with your labor and delivery. Can't wait to hear how it goes! I'm so anxious to hold my little one, but I have tons to do yet before he arrives.
