My baby boy turned one last week. For the occasion, I made him an nontraditional, yet seasonal, 1st birthday cake, Pumpkin Gingerbread Trifle. I found the recipe for in a Taste of Home magazine. Here's a link to it. You need two boxes of gingerbread cake mix (it was kind of spendy...would have made my own but ran out of time), a large can of pumpkin, a cook-and-serve vanilla pudding (4.6 oz) and a carton of Cool Whip.
I baked the cakes in 9" round pans, and cut the edges off and quartered them once they were cool to get the cakes to fit in my trifle bowl easier. Would I make this again? Maybe. I thought it tasted like pumpkin pie, which I love. My husband and sons didn't find it sweet enough for their sugar-smacking taste buds.
What did the birthday boy think?
