Menu Plan 11/22-11/29 (Turkey, Turkey and more Turkey!)


My husband's dad and step-mom are visiting this weekend and leaving Monday, so we fast-forwarded Thanksgiving to today. I cooked my first turkey, and it was great! I will write more about that later with helpful links.

Short and sweet so I can visit with our fam, here's what's on the menu this week. Some items carried over from last week, since our leftovers stretched farther than I thought. I also was so busy cleaning and prepping for our early Thanksgiving dinner (and managing kids for three days by myself while my husband was out of town) that I didn't bake much last week. Ok, so you needed all that information ;) and now you need to see what we are going to be eating:
Breakfasts:
turkey, red pepper, spinach scramble (this would be great with feta cheese scrambled in, but I'm out)
oatmeal
muffins, yogurt, bananas
zucchini bread, cottage cheese, applesauce
Bagels, cream cheese, peaches
Cranberry-orange scones

Lunches:
Turkey-apple salad pitas (or sandwiches)
Chili Relleno casserole
Potato-cheese soup, rolls, carrot/celery sticks
Turkey and Roasted Red pepper paninis on focaccia bread
Roast Beef wraps with shredded lettuce and zucchini

Dinners:
*Don't worry! I will not serve turkey back-to-back every night this week :) I will probably only end up making two or three of the turkey leftover ideas, depending on what entree sounds best to my family.

Turkey enchiladas, guacamole, tortilla chips

Crockpot Turkey and rice
-Minute Rice or partially cooked regular rice (as much as you want)
-Water, as needed for rice
-Meat (pork chops, chicken, or....ugggh, turkey!)
-1 pkg. onion soup mix
-1 can cream of mushroom or cream or chicken soup (or 2 cans if you're making a lot)
Place rice on bottom of crockpot and add water. Lay meat on top. Mix together the soup and soup mix. Pour over meat. Cook on high 4 hours (could probably also do low).

Pork Roast, butternut squash
Cranberry Turkey, sugar snap peas
White turkey chili, tortillas
Sunday roast, potatoes, carrots

*I will add fruits and veggies to round out the meals. I am just skipping that step to save time right now :)

To bake this week:
Granola
Zucchini bread
Banana bread
Cookies of some sort, preferably somewhat healthy, like oatmeal apricot cookies.
Other ideas as I spontaneously think of them, because I'm like that :)

Messy Monday: The Company Edition, and the drawing for the winner of the Recipe for Christmas Joy e-book, are on their way! Give me some time to get my dishes done in the morning and then I'll carve out some time. (Get it, carve, after all that turkey talk? Ha ha...It's late, I know) :)

    Have you ever heard of shelf milk? If so, can you use it in a baking recipe?
